Pork & Cabbage Dumplings

Background:

There is evidence to show that dumplings were being consumed in the tang dynasty as far back as 3,600 BC. The first written recipe for dumplings is believed to have been written around 400 AD. Dumplings have long been a staple dish in many countries, with China being a notable source of the food’s popularity.

Recipe Information:

  • Cooking time: 6 min freezing
  • Serves: 12 people (makes about 36 dumplings)

Ingredients:

  • 2 tbsp Sesame oil
  • 1lb Berkshire ground pork
  • Dumpling wrappers
  • 3 cloves garlic, grated
  • 3 tbsp soy sauce
  • 1 inch ginger grated
  • ½ tsp salt
  • ¼ tsp ground white pepper
  • ¼ cup broth or water
  • 3 cup finely chopped cabbage

Instructions:

  1. Add ingredients (minus cabbage and broth) to a bowl and mix well, until sticky and smooth.
  2. Add ¼ cup broth, 1 tbsp at a time, until fully absorbed. Add chopped cabbage.
  3. Once dumplings are wrapped, place on baking sheet and immediately put in freezer for at least 10 minutes.
  4. When ready to enjoy, add dumplings to boiling water for 6 minutes. The dumplings should float when they are done.
